Well, we baked. I didn't have everything to make the cookies so we made cupcakes. They taste good but they kind of sunk in so they look kind of funky.
I checked the delivery confirmation on my packages and it shows one was delivered today, the other one is still MIA. Hopefully tomorrow.

I had a request for Amandas Coffee Crunch Bar recipe that she sent, so I will post it for everyone! Thanks Amanda!!

Coffee Crunch Bars

2 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons instant coffee
1 cup butter
1 cup brown sugar
1 teaspoon almond extract
1/2 cup walnuts, chopped
1 6oz package mini chocolate chips

Pre heat oven at 350

Blend all ingredients well, except for walnuts and chocolate chips. Once its well mixed, add walnuts and chocolate chips. Pat in a 15 1/2 x 10 x 1 jelly roll pan. Bake until slightly brown on top

Sparkling Butter Toffee Cookies

Recipe By :Land O' Lakes
Serving Size : 60 Preparation Time :0:00
Categories : Cookies

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup sugar
3/4 cup butter -- softened
1 egg
1 teaspoon vanilla
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 cup English toffee bits
Sugar

Heat oven to 350 degrees.
Combine sugar, butter, egg and vanilla in large mixer bowl. Beat at medium speed until creamy (1-2 minutes).
Add flour, baking powder and baking soda. Reduce speed to low. Beat until well mixed (1-2 minutes).
Stir in toffee bits by hand.
Shape dough into 1" balls. Roll in sugar.
Place balls 2" apart onto ungreased cookie sheet. Flatten with bottom of glass to 1 1/2" circle.
Bake for 9-11 minutes or until edges are lightly browned. (Do not overbake.)
Sprinkle with sugar while warm. Cool completely.

We make these every Christmas (along with the bow ties) and they're everyones favorite! My grandma actually has to bake extra because everyone sneaks and eats them all. :lmao:

Feta and Spinach Salad with Butterfly Pasta
2 lb spinach,stems removed and torn in pieces
1/2 cup olive oil
butterfly pasta-1lb cooked and cooled (or any shape)
2T. lemon Juice
2T, wine vinegar
1/2 tsp salt
1/4 tsp ground cinnamon
1/4 tsp dry mustard
1/8 tsp freshly ground pepper
2T toasted pine nuts
2 cucumbers peeled and sliced
2/3c feta cheese crumbled
4 scallions, finely chopped
Put spinach in a very large bowl. In a jar combine oil, lemon juice, vinegar, salt, cinnamon, mustard and pepper. Shake well, pour half over the spinach leaves and toss well. Sprinkle on pine nuts and pasta. Arrange in circles or layers the cucumber slices, then layer on the feta cheese. Sprinkle on the scallions and pour on the rest of the dressing.
 
Your very welcome Kimba! I'm glad everything got to you OK, I was a little worried about the mug and the baking dish thing. Yes the feta pasta salad is a cold dish and I forgot to mention on that, I usually double the ingredients for the dressing, but that is up to you. The broccoli salad is also a cold dish.
