Acorn Squash Soup

Serving Size : 0 Preparation Time :0:00
Categories : Soup

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 medium acorn squash
1 can chicken broth -- (15 ounces)
1 cups 2% milk
1 white onion -- diced
3 garlic cloves -- chopped
1 cinnamon stick
1 tablespoon olive oil
1 teaspoon grated ginger
1 teaspoon sugar
1 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon allspice
1/8 teaspoon nutmeg -- optional

Bake squashes at 325 degrees for 30 minutes or until soft.
Place on a counter to cool. When cool, scoop out the seeds and pulp, then spoon the cooked squash into a bowl. Set aside.
On medium heat, set a two-quart sauce pan and add olive oil. When olive oil is hot, add onion and garlic. Stir until both are thoroughly cooked, but not turning dark in color.
Empty the onion/garlic mixture into the bowl with the squash and add the ginger.
Empty the bowl into a food processor. Pulse the food processor until the contents are pureed.
Return the pureed ingredients to the sauce pan and add the chicken broth, milk and dry ingredients. Stir, then cover and cook at medium-low heat for 30 minutes.
Refrigerate overnight and reheat for serving the next day.

A beautiful note that cheered me up today (I have had an awful cold), She took the time to look at my Disney Wedding Photos & realized my favorite color is purple (I had a mad hatter wedding cake in a all different purples).

So she got a mini scraping spatula in PURPLE! I never find anything in purple! Plus I don't have this size. I love it!

A red silicon baking mit! I kept looking at these at Bed Bath & Beyond! My kitchen is done in stainless, red & black, this fits in perfectly. I was originally going to do purple but cannot find many items.

And for the recipes:

Caramel Popcorn (a great care pkg item to send DH in Iraq!)

Thank you! I know he appreciates hearing a thanks as do I. It's the hardest thing I personally have ever had to go through...we got married in May, he deployed for a year in Aug. But it is getting easier, I do try to keep busy so I don't go crazy wondering if he is okay! I have recieved so many warm wishes & thanks from fellow dis'ers that I started printing them out & am putting them in a scrapbook to send to him at the holidays . God Bless your Family. It really means alot to us.

Damsel's Chocolate Covered Cherries

Recipe By amsel in dis Dress
Serving Size : 0 Preparation Time :0:00
Categories : Candy

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 pounds powdered sugar
1 tablespoon lemon juice
1 cup butter -- softened
12 ounces real chocolate chips
3 jars maraschino cherries -- with stems
1/3 bar paraffin wax
6 tablespoons cherry juice

Combine sugar, butter, cherry juice and lemon juice. Chill 1-2 hours.
Drain maraschino cherries and chill thoroughly.
Make balls of dough the size of a cherry; flatten and wrap around cherry, sealing edges.
Freeze 1/2 hour or more.
In a double boiler, melt chocolate chips together with wax.
Reduce heat and dip frozen, dough coated cherries.
Dry on waxed paper. Place into bonbon papers.
NOTE: Keep refrigerated until the day candy is to be eaten, or the chocolate gets dull, and the center begins to crystallize.
