Holiday Morning French Toast

Amount Measure Ingredient -- Preparation Method

1 cup brown sugar
1/2 cup butter -- melted
3 teaspoons ground cinnamon -- divided
3 tart apples (such as Granny Smith) -- peeled and sliced
1/2 cup dried cranberries or raisins
1 loaf Italian or French bread -- cut into 1" slices
6 large eggs
1 1/2 cups milk
1 tablespoon vanilla extract

Combine brown sugar, butter and 1 teaspoon cinnamon in a 13x9" baking pan.
Add apples and cranberries. Toss to coat well.
Spread apple mixture evenly over pan bottom. Arrange slices of bread on top.
Mix eggs, milk, vanilla and remaining 2 teaspoons cinnamon until well blended.
Pour mixture over bread, soaking bread completely.
Cover and refrigerate 4-24 hours.
Bake, covered with foil in a preheated 375 degree oven for 40 minutes. Uncover and bake 5 minutes. Remove from oven. Let stand 5 minutes.
Serve warm.

I'll share one of my favorite desserts.

OREO CHEESECAKE

1 cup crushed Oreo cookies (about 12)
1 tbsp. butter or margarine, melted

4 pkgs. (8 oz) cream cheese, softened
1 cup sugar
1 tsp. Vanilla
4 eggs
20 Oreo cookies, quartered

Mix crushed cookies and butter; press onto bottom of 9-inch springform pan. Bake at 325 degrees for 10 minutes.

Mix cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs, mixing on low speed until blended. Gently stir in quartered cookies. Pour over crust.

Bake at 325 degrees for 1 hour or until center is almost set. Refrigerate 4 hours or overnight.
 
and how about some soup?

MANHATTAN CLAM CHOWDER

¼ cup margarine (1/2 stick)
1 small onion, chopped (about ¼ cup)
2 cans (8 oz. each) minced or whole clams
2 cups chopped potatoes
1 cup water
1/3 cup chopped celery
1 can (14 oz.) crushed tomatoes or 1 can (16 oz.) whole tomatoes (I prefer crushed)
Salt
Pepper
Thyme
Frozen vegetables—I use peas & carrots or mixed veggies (corn, green beans, peas & carrots)


Cook onions in margarine until tender. Drain clams, reserving liquid. Add clam liquid, potatoes, water & celery to onions. Cook until potatoes are tender, about 10 minutes. Add clams, tomatoes (if you use whole tomatoes, don’t drain them), salt, pepper, thyme & frozen veggies. Heat to boiling, stirring occasionally. I usually simmer it a little while, maybe a half hour.

I love Oreo cheesecake.....I put a layer of chocolate on top :teeth: That was the way I had it at a restaurant once, so anytime I can get MORE chocolate, I go for it.

And it's very easy too! Just make sure you let the cream cheese get really soft. And I recommend crushing the cookies by hand--it's a wonderful way to let go of stress! (just put them in a zip top bag-use a rolling pin or a pan or something like that to crush the cookies)

Carrot 'n Raisin Cheesecake

1 cup graham cracker crumbs
3 tablespoons sugar
3 tablespoons butter -- melted
24 ounces cream cheese -- softened
1/2 cup sugar
1/2 cup flour
4 large eggs
1/4 cup unsweetened orange juice
1 cup carrot -- finely shredded
1/4 cup raisins
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 tablespoon unsweetened orange juice
1 cup sifted powdered sugar

Combine crumbs, 3 tablespoons sugar and margarine.
Press into bottom of 9" springform pan.
Bake 325 degrees for 10 minutes.
Combine 20 ounces cream cheese, 1/2 cup sugar and 1/4 cup flour, mixing at medium speed on electric mixer until well blended. Blend in eggs and juice.
Add combined remaining flour, carrots, raisins and spices; mix well. Pour over crust.
Bake at 450 degrees for 10 minutes. Reduce oven temperature to 250 degrees, continue baking for 55 minutes more. Loosen cake from rim of pan. Cool before removing rim of pan. Chill.
Combine remaining cream cheese and juice, mixing until well blended. Gradually add powdered sugar, mixing until well blended. Spread over top of cheesecake. Garnish with additional raisins and finely shredded carrots, if desired.
 
I'm sitting here printing out my recipes, and thought I'd share some!

Another easy dessert, this one's been a family favorite for a long time. In fact, the first time one of my future brothers-in-law came for dinner, I served this for dessert (mom was the dinner cook, I was in charge of dessert since I was 10--I've always loved to bake). And every time he came for dinner after that, he requested it, and I've made it for him as a birthday dessert!

What You Need

2 env. DREAM WHIP Whipped Topping Mix
2-3/4 cups cold milk, divided
1 tsp. vanilla
2 pkg. (3.9 oz. each) JELL-O Chocolate Instant Pudding
1 baked pastry shell (9 inch), cooled
Make It

BEAT whipped topping mix, 1 cup milk and vanilla in large bowl with mixer on high speed 6 min. or until soft peaks form.
ADD remaining milk and dry pudding mixes. Beat on low speed until well blended. Beat on high speed 2 min., stopping occasionally to scrape bottom and side of bowl. Spoon into shell.
REFRIGERATE 4 hours.
Kraft Kitchens Tips

Easy Coconut Dream Pie
Stir 1 cup toasted BAKER'S ANGEL FLAKE Coconut and 1/2 cup chopped PLANTERS Pecans into pudding mixture before spooning into pastry shell.
Praline Dream Pie
Melt 1/3 cup butter or margarine in small saucepan. Add 1/2 cup chopped PLANTERS Pecans and 1/3 cup packed brown sugar; bring to boil. Boil 30 sec., stirring constantly. Spread onto bottom of empty pastry shell before filling with remaining ingredients as directed.
Special Extra
If using JELL-O Chocolate, Chocolate Fudge or Pistachio Instant Pudding, add 1/2 tsp. almond extract, 1/2 tsp. peppermint extract or 1 Tbsp. MAXWELL HOUSE Instant Coffee to the whipped topping mixture with the milk and pudding mixes.
