I have boxes that have been sitting in the new house for almost a year now!
Wish I was all moved in.

Wow! How fun is this!!! I apologize for not updating on my mail date and receipt of my most wonderful package. I am new to this exchange thing and was not aware of this new thread and the follow up of sent/received info.

I got back from WDW to a sick doggie so I had to rush him to the ER and now am nursing him to health...its an eye issue...

OK, so now that all of you know I babble, I will shut up now!!! ;):rotfl:

Today is my lucky day, I opened the last box that I had gotten from the post office, and it was my other exchange :). This one was from Formrcastmbr. She had sent me the following recipes-

Banana French Toast

Amount Measure Ingredient -- Preparation Method

2 medium ripe bananas -- sliced 1/4" thick
1 tablespoon lemon juice
12 slices French bread -- 1/2 inch thick
1/2 cup semisweet or milk chocolate chips
2 eggs -- beaten
3/4 cup milk
2 tablespoons honey
1/2 teaspoon vanilla
1/4 teaspoon ground cinnamon
1/4 cup sliced almonds
1 teaspoon sugar
Maple syrup -- optional

In a bowl gently toss bananas with lemon juice.
Arrange half the bread slices in the bottom of a greased 2 quart square baking dish. Top bread with a layer of bananas, chocolate chips and remaining bread slices.
In a medium bowl combine eggs, milk, honey, vanilla and cinnamon. Pour slowly over bread to coat evenly. Cover and chill for 6-24 hours.
Preheat oven to 425 degrees. Uncover the baking dish.
Sprinkle bread with almonds and sugar.
Bake for 5 minutes. Reduce oven to 325 degrees.
Bake 20-25 minutes more or until knife inserted near the center comes out clean and top of French toast is lightly browned. Let stand 10 minutes.
Serve with maple syrup, if desired.

Italian Chicken and Vegetable Soup

Recipe Summary

Yield: 6 to 8 servings

2 tablespoons olive oil
4 boneless, skinless chicken breasts, cut into bite-sized pieces (about 1 3/4 pounds)
1 small onion, chopped
1 cup sliced carrots (about 3 small)
2 1/2 cups sliced zucchini (about 2 medium)
2 (14.5-ounce) cans diced tomatoes with basil, garlic, and oregano
2 (14.5-ounce) cans chicken broth
Grated Parmesan, optional
In a large Dutch oven, heat olive oil over medium-high heat. Add chicken, and cook for 10 minutes, stirring frequently. Add onion and carrot, and cook for 5 minutes. Stir in zucchini, diced tomatoes, and chicken broth. Bring to a boil; reduce heat, and simmer, uncovered, for 30 minutes. Top each serving with grated Parmesan, if desired.

Lemon Chiffon Cake
Taste a recipe classic! Feeling nostalgic is a natural side effect of enjoying each light, refreshing lemon-flavored bite.

2 cups Gold Medal® all-purpose flour
1 1/2 cups sugar
3 teaspoons baking powder
1 teaspoon salt
3/4 cup cold water
1/2 cup vegetable oil
2 teaspoons vanilla
2 teaspoons grated lemon peel
7 egg yolks or 5 egg yolks
1 cup egg white (8 eggs)
1/2 teaspoon cream of tartar
Creamy Lemon Glaze (See Below)


1. Move oven rack to lowest position. Heat oven to 325ºF.
2. Mix flour, sugar, baking powder and salt in large bowl. Beat in cold water, oil, vanilla, lemon peel and 7 egg yolks (if using all-purpose flour) or 5 egg yolks (if using cake flour) until smooth.
3. Beat egg whites and cream of tartar in large bowl with electric mixer on high speed until stiff peaks form. Gradually pour egg yolk mixture over beaten egg whites, folding with rubber spatula just until blended. Pour into ungreased angel food cake pan (tube pan), 10x4 inches.
4. Bake about 1 hour 15 minutes or until top springs back when touched lightly. Immediately turn pan upside down onto heatproof funnel or bottle. Let hang about 2 hours or until cake is completely cool. Loosen side of cake with knife or long, metal spatula; remove from pan.
5. Spread Creamy Lemon Glaze over top of cake, allowing some to drizzle down side.

Creamy Lemon Glaze





1/3 cup butter or margarine
1/2 teaspoon grated lemon peel
2 cups powdered sugar
3 to 4 tablespoons lemon juice

1. Melt butter in 1 1/2-quart saucepan over low heat; remove from heat. Stir in lemon peel and powdered sugar. Stir in lemon juice, 1 tablespoon at a time, until smooth and consistency of thick syrup.
 
Minestrone

2 tablespoons oil
1 medium onion, diced
2 medium carrots, diced
1 celery stalk, diced
2 medium zucchini, diced
1 garlic clove, minced
3 medium potatoes (about ¾ lb.), peeled & diced
2 (15 ½ oz.) cans cannelloni beans, drained (I've been using 1 can kidney beans & 1 can cannelloni beans, drained)
1 (14 ½ oz.) can diced tomatoes, undrained
2 (14 oz.) cans low sodium chicken broth (instead of 2 cans which is 28 oz. I've been using the 32 oz carton of broth, I like the extra liquid in the soup)
3 cups water
½ tsp. dried rosemary
½ tsp. salt
½ tsp. pepper



1. Heat oil in large stockpot over medium heat. Add onion; cook, stirring occasionally, 6 minutes or until softened. Add carrots & celery; cook, stirring occasionally. 3 minutes. Add remaining ingredients. Cover & bring to a boil; reduce heat & simmer gently 1 to 2 hours.
