I swear by this soup. I lose weight every time I make a batch of it:
Southwestern Vegetable Soup
1 vegetable boullion cube
6 cups water
2 14 oz. cans of diced tomatoes
1 4 oz. can of green chilis
1 can dark red kidney beans, with juice
carrots, sliced (I use about a cereal bowl's full) (I usually microwave the carrots, covered with water, for 3 minutes on high to give them a head start)
frozen green beans (about 1/2 small bag)
frozen corn (about 1/2 small bag)
1/2 onion chopped
1-2 teaspoons red chili pepper
salt and pepper to taste
cook on the stove until carrots are soft.
It's really a "throw it in and see how it tastes" recipe.
