Restaurant reviews and recipes...formerly Disney QOTD

Cape May - we have had the dinner buffet there a few times when we have stayed the Beach Club Villas. The food was OK and we liked that we got a bucket of crayons and could draw on the paper table cloth like the kids were doing!!
 
Boulangerie Patisserie -- Many times. DH has been traumatized though because they stopped serving their Marvelous. Luckily we have a pretty darn good french bakery in our downtown area that is just as good as BP. (And they have a much broader choice and a sit down area.) We have another too, but the downtown one is better, I think.

Cape May -- Yes, many times. The last being early December after they brought back the crab legs. I did not eat any though. They had something like a beef stroganoff that was really yummy that I went for instead.

Tomato Mozzarella Sandwich

Amount Measure Ingredient -- Preparation Method

4 Foccacia Rolls
16 ounces Fresh mozzarella cheese
4 teaspoons Pesto mayonnaise
1/4 pound Fresh arugula
Pesto Mayonnaise:
1/2 cup Mayonnaise
3 teaspoons Basil Pesto (found in your local
supermarket)
Oven Dried Tomatoes:
3 Vine ripe tomatoes
1 clove garlic -- minced
2 teaspoons extra virgin olive oil
Salt and freshly ground pepper to taste

Method of Preparation:
Split foccacia bun.
Spread 1 teaspoon pesto mayonnaise on each bun bottom.
Place 1 ounce Arugula on top of mayo.
Arrange 3 slices mozzarella cheese and top with 2-3 oven dried tomato slices.
Top with bun.

Pesto Mayonnaise: In a small mixing bowl place mayo and pesto. Mix until well incorporated.

Oven Dried Tomatoes:Preheat oven to 200 degrees.
Wash tomatoes and dry well, remove core.
Slice tomatoes into ¾ inch slices and place on baking sheet.
Combine garlic and olive oil and brush tomatoes with it. Season to taste with salt and freshly ground pepper.
Roast for about 1 hour (note: tomatoes should be browned and juicy).

Brownie Cheesecake

Brownies:
2 cups sugar
1 1/4 cups all-purpose flour
2/3 cup cocoa powder
1 1/2 teaspoons salt
1/2 teaspoon baking powder
5 eggs
1 cup butter -- melted
1/2 cup semi-sweet chocolate chips
Cheesecake:
3/4 cup sugar
3 tablespoons cornstarch
32 ounces cream cheese
1 tablespoon lemon juice
2 teaspoons vanilla extract
2 eggs
2 tablespoons heavy cream
2 tablespoons sour cream

Brownies:
Preheat oven to 350°F.
Grease a 13 x 9 x 2" baking pan. Sift together sugar, flour, cocoa powder, salt, and baking powder in a large mixing bowl.
Beat flour mixture and eggs on low speed using an electric mixer, scraping bowl occasionally and mixing until smooth.
Slowly add melted butter and beat until just combined: do not over mix.
Fold in chocolate chips.
Transfer batter to prepared baking dish. Bake until toothpick inserted into center comes out clean, about 30 minutes.
Remove from oven and set aside to cool.
Cheesecake:
Preheat oven to 325°.
Cream sugar, cornstarch, and cream cheese in a large bowl using an electric mixer.
Add lemon juice and vanilla extract, mixing thoroughly.
Add eggs one at a time, scraping the bowl with each addition.
Fold in heavy cream and sour cream. Spread batter on top of already baked brownies.
Bake until cheesecake is lightly browned and firm, about 55 - 60 minutes.
Cool completely and refrigerate at least one hour before serving.

Chocolate-Dipped Almond Biscotti 1

Amount Measure Ingredient -- Preparation Method

3/4 cup unsalted butter -- at room temperature
3/4 cup sugar
4 large eggs
1 tablespoon vanilla
2 teaspoons almond extract
3 3/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon kosher salt
2 teaspoons lemon zest
2 teaspoons orange zest
1 cup almonds -- toasted
Double Chocolate Coating
6 ounces high-quality bittersweet chocolate
5 tablespoons unsalted butter
2 ounces white chocolate

Preheat the oven to 350 degrees. Line the cookie sheet with parchment paper or lightly grease.
Sift flour, baking powder and salt together, and set aside.
In a large mixing bowl, cream the butter and sugar. Add eggs, vanilla, almond extract and lemon and orange zest, and beat until the mixture is combined (it will be soupy and a bit lumpy).
Add half the flour mixture and beat until it is just combined. Use a wooden spoon to stir in the remaining flour mixture and the nuts.
Shape the dough into two 15- x 3 1/2- x 1/2-inch logs and place them on the cookie sheet about 3 inches apart.
Bake 32 to 35 minutes or until golden brown. Cool 2 hours.
Using a long serrated knife slice the logs diagonally into 1/2-inch slices. Arrange cut-side down on a baking sheet and bake at 300 degrees for 7 minutes. Flip the biscotti over and bake an additional 4 to 5 minutes. Cool on a wire rack.
Double Chocolate Coating -Melt the bittersweet chocolate and butter in a double boiler over gently simmering water (or melt in a microwave, stirring every 15 seconds until nearly melted, then remove and stir until fully melted).
Dip half of each biscotto in chocolate, then let dry on a cooling rack.
Melt white chocolate in a double boiler over gently simmering water (or melt in a microwave, stirring every 15 seconds until nearly melted, then remove and stir until fully melted) and place in a pastry bag with a œne writing tip (or in a plastic freezer bag with a tiny piece of the corner cut off).
Drizzle white chocolate over the dark chocolate.

Cinnamon Yummies

Sweet Dough
3/4 cup flour
2 1/4 cups bread flour
2 tablespoons sugar
1 tablespoon powdered milk
3/4 teaspoon salt
6 1/2 tablespoons butter -- softened
1 package dry active yeast
2 eggs
1/2 cup water
Pan Smear
1 cup plus 2 tablespoons butter -- softened
6 tablespoons light brown sugar
1 1/2 tablespoons cinnamon
1 1/2 tablespoons all-purpose flour
3/4 cup light corn syrup
Filling
1/4 cup sugar
1/2 teaspoon cinnamon
1 egg -- beaten

Sweet Dough: Mix all ingredients together in a large bowl and stir until combined. Turn the dough out onto work surface and knead until soft and elastic, about 10 minutes. Cover with plastic wrap and let sit 30 minutes.
Pan Smear: While the sweet dough rests, prepare the pan smear.
Cream together butter, sugar, cinnamon, and flour in a medium bowl. Add the corn syrup and mix well until blended. Spread into bottom of a 9- by 9-inch baking pan. Set aside.
Place the sugar and cinnamon together in a small bowl and stir with a fork until well mixed. Set aside.
When the dough is ready, roll it out into a rectangle about 6 by 12 inches and 1/2" thick.
Brush the dough with the beaten egg and sprinkle with the cinnamon-sugar mixture.
Starting with the short end, roll the dough into a log shape, keeping it tight. Seal the edge by pinching the dough together. Slice the roll into four pieces and place them in the pan on top of the smear. Cover with plastic and let rise until doubled, about 1 1/2 to 2 hours.
Bake at 350 degrees for 30 minutes or until a deep golden brown. Let cool for 5 minutes, then invert onto a large plate and serve immediately.

Pecan Shortbread Cookies With Maple Glaze

Amount Measure Ingredient -- Preparation Method

3 1/4 cups all-purpose flour
1/2 cup rice flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 pound butter
1 1/2 cups confectioners’ sugar
2 teaspoons vanilla extract
1 1/2 cups chopped pecans
Icing
1/2 cup butter
2 cups confectioners sugar
1 teaspoon vanilla extract
2 teaspoon hot water
2 teaspoon maple flavoring

Mix together the flour, rice flour, baking powder and salt in medium size bowl. Set aside.
In a mixer with the paddle attachment, cream butter on low speed for 3 to 4 minutes.
Add sugar and vanilla and continue to cream on moderately low speed for 2 minutes.
On low speed mix in the dry ingredients, blending just until the particles of flour are absorbed.
Add in the pecans.
Roll into logs about 2" wide. Wrap in plastic or parchment, and refrigerate or freeze until needed. (These can also be rolled out and cut into shapes.)
Slice the logs and bake at 325º F about 40 minutes.
Icing: Mix the butter, confectioners sugar and vanilla together.
Add in the water and maple flavoring to reach the consistency for pouring or spreading icing.
 
We have a few times and what we have had was always good.
I saw a cake on the cake thread I would like to see if they can make for our wedding anniversary. I have some months yet, so plenty of time to check into that.
 
ooo... We have stayed at the BC twice and really liked it. And can you believe -- we were assigned the same room both stays, a little over a year apart. :eek: What were the chances? :confused3

DH's favorite characters are Jack Skellington and Jafar. If they could work Jack in there it would be even better. And appropriate since there are several hidden Jack's in WDW HM. :wizard:

Of course I was 10 years old when I got married. :laughing:

The poster stated they got their cake from CA Grill. But figuring Boardwalk Bakery could do the same or similar. DH would get a kick out of it. :cheer2:

English Trifle

Amount Measure Ingredient -- Preparation Method

Sponge Cake
3/4 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla
2 tablespoons melted butter
3/4 cup sifted all purpose flour
Chantilly Cream
1 cup milk
1/2 vanilla bean
3 egg yolks
2 1/2 tablespoons sugar
2 tablespoons cornstarch
2 cup heavy cream -- whipped

In a sauce pan, combine milk and vanilla bean. Bring to a boil. In a mixing bowl, combine yolks, sugar and starch. Pour half the boiling milk into the yolks stirring constantly. Return to sauce pan and stir until thick. Remove from heat and chill. When chilled. Pass through a sieve. Fold in heavy cream.
Sponge Cake
In a mixing bowl combine sugar eggs, salt and vanilla. Whip over a double boiler until triple in volume. Fold in flour and butter. Pour into a greased 10" round cake pan. Bake at 350 degrees for approximately 35 minutes or until done.
In a 9" glass bowl, line the bottom with a 1/2" thick piece of sponge cake. Sprinkle with sherry. Cover the sponge cake with 1/2 the chantilly. Cover the chantilly with strawberry halves. Repeat this process one more time. Cover with whipped cream and toasted coconut.

I really enjoy Beach Club, we've stayed there twice also, really enjoy the pool area and being able to walk to EPCOT. Our next trip we're going to try out BLT, hope I'll enjoy it as much as BCV, if not I might be selling some points and buying more BCV points.
