First of all, hopefully you're sleeping at Animal Kingdom Lodge since they don't allow people to sleep at AK! ;)

I would go to Boma the first night. Once you get to AKL you might not want to leave it to go to Rainforest Cafe. Also, I would have a hard time with two big meals that day.

We also ate breakfast at Boma and really enjoyed it.

On Wednesday I would try and find a place to eat breakfast either closer to MGM or I'd eat at the Poly. If MGM is your focus that day you won't have very many hours by the time you eat breakfast near MK and then need to get back to have dinner at Artist Point.

The restaurants look delicious, though!

Rainforest Café ** -- I was pretty disappointed there. I'd recommend House of Blues instead.

Main Park - Animal Kingdom (early) -- Tusker House is great.
Main Park - Magic Kingdom (late)

Was wondering why no EPCOT? Le Cellier & the Rose & Crown are great places to dine there.
 
They all sound just great - couple of things, if you are planning on breakfasts at BOMA at AKL make a ps! They are always busy here.
I also second Tiggger&Belles comment about Boma the first night (you won't want to leave!), and eating at MGM - not sure about if you like that sort of thing but if everyone in your party has a good sense of humor then you might try Prime Time Café. This way, if there is Fantasmic that day and you don't have really little ones you won't have to miss it!
Also, have you considered Epcot instead of AK for your Monday morning? Noting better than french pasteries for breakfast! It would be a shame to miss it!
