U2's The Joshua Tree with the photo by Anton Corbjin.

I had the original CD issue, and it had a weird looking version of the album cover on the CD booklet. Instead of the full background, it was a closeup of the four that was also blurred. A few years later I bought the Mobile Fidelity version, and that had the proper album cover.

A bit obscure, but I loved this cover:

I wasn't really into it, but I do remember Joe Satriani's Surfing with the Alien cover, with the Silver Surfer. Rumor is that they didn't pay to use the artwork, which was lifted without authorization.

I always liked the Journey covers too. My fav though was their greatest hits cover:
