Has anyone else done quarantine bread making?

The past 3 weeks or so DH has had me making sugar cookies and tea cakes (his grandmother's recipes). He gets all excited about the "idea" of the cookies and cakes, but after they're done, he eats maybe one or two and is done. After ALL THAT HARD WORK, I just refuse to let it go to waste. I finish them all off and now all my clothes are getting too tight. I refuse to make any more! >:(
Sounds like my husband and kids. Drives me nuts when I make something and then have to feed it to our chooks because it hasn't been eaten. I'm now either halving the recipes or delivering the extras to either sets of parents (or considering dropping off to friends) now that our lockdown has been loosened.

I’ve made banana nut bread twice since quarantine.

I don’t have a bread maker, but we both enjoy good tasting bread. Today I am expecting a loaf of artisan bread from Dayton Ohio. Yes, I ordered an Ultimate Grilled Cheese package from them along with some Ohio baby pickled beets. Those things are the best!

I also made homemade bagels

I made a dutch oven bread last week. I'm really excited to try to make all different kinds.
When this is all over I think I'm going to order a bread machine just to make it a little more convenient.

Just a garlic beer bread so far (got the recipe here on the DIS.) My family loved it!
I made beer bread yesterday with Guinness. It was very good.

Please, do tell, however about the garlic version. My version was a little sweet. 3 cups flour, 1/4 cup sugar, 3 tsp. baking powder and 12 oz. beer. Mix well and bake at 375 for 50-60 minutes.

Do I just add some garlic to this recipe?

I may have to make another loaf for tonight's dinner if that's the case.

Yup. Fortunately, I bought a large package (think pound size) of yeast years ago which I keep in my freezer. (and yes, that WORKS). That years old package of yeast has proven to be quite useful. LOL.

Not bread, but I learned how to make corn tortillas. When this first started, I had only a little flour and some very weak, half dead expired yeast. What I did have was tons of masa from a not actually performed Christmas tamale project. So we've been making tortillas and tamales. I did get new yeast and flour, but haven't done that much baking (a couple pizzas). Plan on making some cakes this week for my husband's birthday and Mother's Day. I used to do a lot of cake baking and decorated, but haven't in years.

I've always made french bread and hamburger rolls. I attempted to make actual bread and the first time was a complete failure. I haven't attempted it since.

I need some subway type rolls for tomorrow so I guess I'll use the hamburger roll recipe and shape them differently.

I adhere to a low carb eating regime so haven't made much in the way of flour based foods. Stored a half a loaf of whole grain and rye bread in the freezer though and it's held us for almost 2 months.

I have made corn tortilla too though and ran them thru my pasta maker to make them thinner. Same for Asian dumpling wrappers and some Indian breads.

At least every other week, I'm making bread. Not unusual, we love fresh bread.

I use these recipes, usually. I add wheat flour, as DH prefers it (but don't totally replace it; usually replace just a cup).

This is a good one, that shows step by step what you should be doing, for those venturing into French bread for the first time:

I want to try these next week:

Broke out the old (28 years old) bread machine. I've lost count of the number of pizza crusts I've made over the quarantine.

I also made sandwich buns when had pulled pork in the crockpot, because I'd forgotten to pick them up at the grocery store. With the KitchenAid mixer, it was really easy, and they were wonderful.

ETA: I've also been playing with pie crust more -- I've always been a rolling pin failure. Was able to make pasty dough (beef hand pies) and quiche crust.

I had a breadmaker 20 years ago and it was okay, but it was upright and when we moved into our house, there was nowhere to put it. I would be interested in buying a new one, though. Even if you don't bake the bread in the unit, you can take it out and shape it into buns or even just pop it into a loaf pan in the oven.

Anyway, does anyone have any recommendations for a good horizonal breadmaker?

Zojirushi bread machine available on Amazon. It is pricey, but makes incredible bread!! I bought one, then my daughter saw it and bought one to replace the one that she had.

I'm new to bread making and so far the only thing I've tried is a no knead recipe.
For those of you without a bread machine do you do all your dough by hand or do you use a Kitchenaid mixer?

I have a tried and true beer bread that I sold for years at a Farmer's Market - basically what you have above with only 1 TB of sugar and about 1/4-1/2 Cup fresh grated parmesan cheese and about 1-2 tea Italian seasoning. I also cut back on the beer to 8 oz (gives the beer drinker in the family a treat). I usually made about a dozen loaves at a time so I used 2 bottles for 3 loaves. Ohh and also about 2 TB butter diced into cubes on the top of loaf before baking. Perfect bread for when you don't have yeast or patience for sourdough.
