Making chocolate chip cookies

yes.....love the chocolate. And I like them best right out of the oven....after that I can resist.
I buy BIG bags (Costco size) and never run out
 
It never even occurred to me to add extra...I find the amount in the Toll House recipe to be more than sufficient. I like chocolate chips but I don't really like biting into a cookie and just getting a mouthful of chips and hardly any cookie. Then what's the point of making cookies at all, just eat a bag of chocolate chips.

This. If they turn out correctly, then the recipe is a perfect ratio of cookie to chips for me (assuming bags are still 12 ounces. Haven't bought a bag of chips in a while.)

My problem is I have been trying to make cookies for the kids that I remember as a kid for 17ish years (standard Nestle recipe.) No matter what I do they come out cakey. I've followed a vid from Alton Brown when he made 6 batches differently changing things. His changed dramatically with 6 distinctly different looking cookies, mine, always the same, thick and cakey.
 
Cakey? Maybe add another egg? It's the reverse of making cookies from cake mix, where you reduce the number of eggs. Are you using baking soda and baking powder? Baking powder will make a thicker* (but not necessarily cakier**) cookie*

I sometimes add a bag of salted caramel chips, toffee bits and chopped pecans. I make a double batch, but only bake one. The rest goes in freezer containers to bake fresh cookies later.
